Adam Liaw’s tomato, onion and cucumber raita
Raitas are often thought of as cooling but are more for balance in a meal – strongly spiced dishes should have a mildly spiced raita. This version is a little more “belt and braces” than most but feel free to leave out any ingredients (except the yoghurt).
Ingredients
2 cups thick yoghurt
1 small cucumber, deseeded, finely diced
1 tomato, deseeded, finely diced
½ red onion, finely diced
¼ cup finely chopped coriander, plus extra to serve
1 small green chilli, deseeded and finely chopped
½ tsp salt
¼ tsp ground cumin, plus extra to serve
Method
Whisk the yoghurt in a bowl until smooth. Add the remaining ingredients, mix well and adjust the seasoning. Scatter with a little extra cumin and coriander to serve.

Adam Liaw’s eggplant dopiaza
“Dopiaza” means “double onions”, referring to onion being added twice. Lamb, chicken and okra often feature in this dish but I’ve made it with eggplant.
