Adam Liaw’s Japanese strawberry milk
Whipping up this impressive-looking drink is much less effort than making a milkshake, and even more delicious.
Ingredients
500g strawberries, stalks removed
5 tbsp caster sugar
2 tbsp honey
juice of ½ lemon
full-cream milk, to taste
ice cubes, to serve
extra chopped strawberries, to garnish
Method
Step 1
Make a crushed strawberry syrup by halving the strawberries and placing them in a small saucepan with the sugar, honey and lemon juice. Place on medium heat, crushing the strawberries with a fork as you go, but leaving the syrup chunky. Simmer for about 5 minutes, until slightly thickened, then chill in the fridge.
Step 2
To serve, spoon 2-3 tablespoons of the syrup into a glass, including on the walls of the glass, then fill with chilled milk. Add the ice, garnish with a few chopped strawberry pieces, and serve.
