Ingredients

  • 500g strawberries, stalks removed

  • 5 tbsp caster sugar

  • 2 tbsp honey

  • juice of ½ lemon

  • full-cream milk, to taste

  • ice cubes, to serve

  • extra chopped strawberries, to garnish

Method

  1. Step 1

Make a crushed strawberry syrup by halving the strawberries and placing them in a small saucepan with the sugar, honey and lemon juice. Place on medium heat, crushing the strawberries with a fork as you go, but leaving the syrup chunky. Simmer for about 5 minutes, until slightly thickened, then chill in the fridge.

  2. Step 2

To serve, spoon 2-3 tablespoons of the syrup into a glass, including on the walls of the glass, then fill with chilled milk. Add the ice, garnish with a few chopped strawberry pieces, and serve.
