This salad takes staples like ham, cheese and bread and combines them with a roast chook to produce the flavours of a French classic – chicken cordon bleu.

Ingredients

  • 2 slices sourdough, cut into 1cm cubes

  • 3 tbsp olive oil

  • ½ roast chicken

  • 2 heads baby cos lettuce, roughly chopped

  • 80g good-quality, off-the-bone leg ham, diced

  • 8 cherry tomatoes, halved

  • 1 cup coarsely grated gruyere

  • ½ red onion, thinly sliced

FRENCH DRESSING

  • 3 tbsp white wine vinegar

  • 1 tbsp Dijon mustard

  • ½ tsp caster sugar

  • ½ cup olive oil

  • salt and black pepper, to season

Method

  1. Step 1

    Heat a large frying pan over medium heat and add the sourdough cubes and oil. Fry until the bread is golden brown, then remove from the pan. Pick off the meat from the roast chicken and roughly chop it. Place the chopped lettuce on a serving platter and top it with the chicken, ham, tomatoes, cheese, onion and sourdough croutons.

  2. Step 2

    For the dressing, whisk the vinegar, mustard and sugar together and slowly drizzle in the oil while whisking to a thick, emulsified dressing. Season well with salt and black pepper. Pour as much of the dressing over the salad as you like and serve.
