This dish is named for William Smith O'Brien, who led a revolt against the political conditions that led to the Irish potato famine in the 1840s.

Ingredients

  • 4 large potatoes, scrubbed

  • 50g butter

  • 1 large brown onion

  • 2 cloves garlic

  • 1 red capsicum, cut into 2cm cubes

  • 1 green capsicum, cut into 2cm cubes

  • ½ tsp paprika

  • salt and black pepper, to season

Method

  1. 1. Microwave all the potatoes together, whole and uncovered, for about 12 minutes. Stand for 10 minutes, then cut into 3cm cubes.

    2. Heat a large frypan over medium heat and add the butter. Fry the onion, garlic and capsicum for about 5 minutes until the onion is lightly golden, then add the potatoes and paprika and stir well. Season with salt and pepper and cook for about 10 minutes, gently stirring occasionally until the potatoes have softened and are lightly crisped around the edges.
