Ingredients

  • 150g self-raising flour

  • 25g soft brown sugar

  • 50g unsalted butter

  • 1 tsp flake salt

  • 125ml milk

  • thickened cream, to serve

SIMMERING SAUCE

  • 75ml golden syrup

  • 100g soft brown sugar

  • 50g butter

Method

  1. Step 1

    Combine the flour, sugar, butter and salt in a bowl and rub the mixture together with your fingers to form breadcrumbs. Add the milk and mix to a thick batter. Lumps are fine.

  2. Step 2

    In a medium saucepan, combine the ingredients for the simmering sauce with 2 cups of water. Bring to a simmer, then drop heaped spoonfuls of batter into the sauce. Simmer for 20 minutes, until the dumplings are cooked through.

  3. Step 3

    Allow to cool in the syrup for a few minutes, then serve the dumplings in a bowl with a little syrup and some thickened cream poured over the top.
