Adam Liaw’s smoked salmon and avocado salad
A really good smoked salmon salad is a great recipe to have in your back pocket.
Ingredients
8 sugar snap peas, trimmed
2 tbsp apple cider vinegar
3 tbsp grapeseed oil
1 tbsp Dijon mustard
½ tsp honey
75g sour cream
salt and black pepper, to season
120g baby spinach and rocket leaves
3 spring onions, finely sliced
1 avocado, cut into wedges
200g smoked salmon
2 tbsp dill, finely shredded
lemon wedges, to serve
Method
Step 1
Place the peas into a heatproof bowl and pour boiling water over them. Stand for 2 minutes, then drain and split the pea pods lengthwise.
Step 2
Combine the vinegar, grapeseed oil, mustard, honey and sour cream together and whisk to a smooth dressing. Season well with salt and pepper.
Step 3
Combine the green leaves with the spring onion, peas and dressing and toss to combine. Gently mix through the avocado and smoked salmon. Scatter with dill and black pepper and serve with the lemon wedges.
Adam’s tip: Dill and seafood are a great combination. Add dill to dips, mixed through mayonnaise, yoghurt or sour cream, and tossed in with cooked fish and melted butter.
