30 minutes from go to wow: Char siu pork skewers with cucumber and sesame salad

Ingredients
⅓ cup char siu sauce
¼ cup oyster sauce
2 tbsp Shaoxing cooking wine
2 tsp Chinese five spice
2 garlic cloves, crushed
1 tbsp finely grated ginger
700g Korean-style thinly sliced pork belly
3 Lebanese cucumbers, cut into thin wedges
2 spring onions, halved and cut into 6cm lengths
1 tbsp sesame oil
1 tbsp rice wine vinegar
16 store-bought Chinese pancakes, steamed
black sesame seeds, to serve
Method
Step 1
Combine the char siu, oyster, Shaoxing, Chinese five spice, garlic and ginger in a large bowl. Add to pork and toss to combine. Set aside at room temperature to marinate for 15 minutes.
Step 2
Thread the pork onto 16 small metal skewers. Preheat the oven grill to high. Place the skewers on a baking tray, place the tray under the grill and cook for 8 minutes, turning, until charred.
Step 3
Place the cucumber, spring onion, sesame oil and vinegar in a bowl and toss to coat. Serve the skewers in pancakes with cucumber salad and sesame seeds. To eat, place a skewer on a pancake, fold the pancake in half in your palm, and remove the skewer.
