Icelandic rice pudding is a dessert, but salty rather than sweet, in the same way that porridge in the UK often is. The contrast between the slightly salty pudding and the sweet cinnamon sugar is lovely.

Ingredients

  • 1 cup medium-grain rice

  • 1 litre milk

  • ½ tsp salt

  • 1 cup raisins

  • 50g cold butter

  • ¾ cup caster sugar

  • 1 tbsp ground cinnamon

Method

  1. Step 1

    Rinse the rice and place in a medium saucepan. Add enough cold water to cover the rice by 1cm and bring to a simmer. Once simmering, add the milk and bring to a simmer again. Simmer, stirring occasionally, for about 45 minutes until the rice has a porridge-like texture (it should hold its own shape and not spread like a risotto). Add the raisins and simmer for a further 10 minutes. Stir through the butter just before serving. You can also place a pat of butter on top of the warm pudding.

  2. Step 2

    Combine caster sugar and cinnamon together and sprinkle very generously over individual serves of the pudding.
