Icelandic rice pudding.
EASY

Adam Liaw’s Icelandic rice pudding

Icelandic rice pudding is a dessert, but salty rather than sweet. The contrast between the slightly salty pudding and the sweet cinnamon sugar is lovely.

Fish pie Friday: Adam Liaw’s mash-up is pure comfort after a long week

In its most basic form, this fish and potato stew is the national dish of Iceland, but all well-loved dishes go through thousands of variations.

Chive pancakes with smoked salmon and creme fraiche

This is my idea of a perfect breakfast: quick and simple enough and yet, when all the toppings are in place, almost cafe-like.

Adam Liaw's classic roast chicken.

Classic roast chicken with buttered vegetables recipe

There are few dishes more fundamental than a good roast chicken, the basics of which follow two important principles. The first is to never overcook it. Chicken is full of flavour but it has a reputation for being dry because we're terrified of under-cooking it, so we go way too far the other way. If you have to make a trade-off between crispy-brown skin and succulent, tender chicken, go for tender every time.

Slow-cooked duck with beetroot relish.

Slow cooked duck legs with beetroot relish

Fortune favours those who plan ahead. This recipe takes about eight hours all up, but there's little toil in that time. I really like this beetroot relish, so use it with lots of barbecued or roasted meats it works a treat. Speaking of which, make sure you serve this duck with some sauteed spinach, silverbeet or kale, whichever you like best.

This duck dish swaps risotto for farro.

Duck breast with balsamic glaze, farro and cavolo nero

This wintry dish would go well with an earthy pinot. You could replace the cavolo nero with kale, or broccolini sauteed with garlic. Duck breasts are now commonly available from supermarkets.

Swedish pancakes are very thin and have a high proportion of milk and eggs to flour, which makes them quite delicate. Stack them, roll them or fold them and serve with lots of whipped cream.

Beef stroganoff with tagliatelle.

Beef stroganoff

This casserole is a saute rather than a braise, and using eye fillet makes this a quick dish to cook as the tenderness of the cut reduces cooking time.

Fettucine stroganoff.
EASY

Beef stroganoff fettuccine

Beef stroganoff is great served with buttered pasta, so why not skip the middle part and go straight from stroganoff to noodle? You don't need a lot of beef in these noodles, so don't go overboard with the mince.
