Ingredients

  • 2 cups “something” (mixed raw vegetables, cooked leftovers, kimchi etc), roughly chopped

  • 2 tbsp vegetable oil

  • ½ cup sour cream, to serve

  • freshly ground black pepper, to serve

  • lemon wedges, to serve

FRITTER BASE

  • ½ cup self-raising flour

  • 2 eggs

  • ½ tsp salt, plus extra to season

  • 3 zucchinis, grated

  • 1 cup grated cheese (optional)

Method

  1. Step 1

Combine the “something” with the fritter base ingredients and stir to form a thick mixture. You may need to add a splash of water if your “something” is very dry.

  2. Step 2

Heat a large frying pan over medium heat and add the oil. Spoon about ½ a cup of mixture into the shape of a small patty and fry for about 4 minutes per side until golden and cooked through. Repeat for the
remaining mixture. Serve with a dollop of sour cream, ground black pepper and lemon wedges on the side.

Adam’s tip: Food waste is an enormous problem in the developed world
and particularly in Australia. It’s also a problem we have control over – we
just need to commit to stop wasting food.
