This cherry tomato rendition of India’s most popular salad is slightly sweeter and a bit less watery than the regular version.

Ingredients

  • 1 Lebanese cucumber, peeled in stripes

  • ½ red onion, finely diced

  • 12 cherry tomatoes, finely chopped

  • juice of ½ lemon

  • 5 mint leaves, finely sliced

  • ¼ tsp ground cumin

  • pinch of sugar

  • salt, to season

Method

  1. Remove the seeds from the cucumber and finely dice the remainder. Combine with the rest ofthe ingredients and mix well. Taste and adjust the seasoning as required.
