Mexican street corn pizza
Riffing on elote, the much-loved grilled sweetcorn of Mexico, this easy pizza is the perfect fiesta food.
If you’ve ever visited Mexico, you’ve likely tried elote—a traditional street food made from grilled corn on the cob, topped with cheese, chilli and lime. Now, imagine those flavours on a golden pizza crust.
Ingredients
200g fresh mozzarella, torn
150g ricotta
1 tsp finely grated lime zest
2 garlic cloves, crushed
½ cup finely grated parmesan, plus extra to serve
2 x 20cm store-bought pizza bases
2 corn cobs, kernels removed
2 tsp extra virgin olive oil
1 jalapeno chilli, thinly sliced
handful of coriander sprigs
lime wedges
Method
Step 1
Preheat oven to 200C fan-forced (220C conventional). Combine the mozzarella, ricotta, lime zest, garlic, and half of the parmesan in a bowl. Season with salt and pepper.
Step 2
Spread the mixture over the pizza bases. Top with corn kernels and drizzle with oil. Place the pizzas on baking trays and bake for 20 minutes, or until golden and bubbling.
Step 3
Serve topped with the remaining parmesan, jalapeno, coriander leaves and lime wedges.
