Tomato and avocado salad
Just like stir-fries, salads don't need to combine 20 different ingredients to taste good. Quite the contrary, a few ingredients seasoned well are all you need for a delicious, distinctive salad.
Ingredients
3 cups mixed tomatoes (cherry, heirloom etc), halved or cut into wedges
2 avocados, peeled and cut into large cubes
1 coriander plant, roughly chopped
1 bird's-eye chilli, finely sliced
¼ red onion, finely sliced
1 tbsp red wine vinegar
¼ tsp caster sugar
2 tbsp olive oil
Method
1. Combine all the ingredients in a bowl and season very generously with salt and black pepper. Gently toss the ingredients together and serve immediately.
