'White glove service' is literally translated here. Certainly the superb staff are some of Brisbane's finest; knowledgeable, unobtrusively attentive and immaculately presented, down to those pristine gloves. The French-inspired interior is no less chic, with the Central Station clock tower just outside the windows gently illuminating luxurious, finishes, crisp linen and quality glassware. This same effortless elegance is mirrored in the menu where indulgent ingredients and complex components are presented with studied restraint. Plump scallops are paired with a smoked corn veloute, while sweet lamb benefits from a slick of well-matched blueberry. Unctuous beef cheeks, however, deliver the knock-out blow when paired with foie gras, crisp chickpea chips and a daub of ratatouille. Desserts, such as 'The Financier', a hot and cold deconstruction of dark chocolate, coconut sorbet and zesty lime, are similarly triumphant. A fine dining event from start to finish, Prive is an experience to be savoured in a world increasingly embracing casual dining.
