Forget banana bread - bake a batch of these simple banana biscuits instead

These moist banana biscuits are a great way to use leftover or overripe bananas that isn’t just another batch of banana bread.

Ingredients

  • 150g butter

  • 1 tsp vanilla extract

  • 150g soft brown sugar

  • 3 ripe bananas, mashed

  • 2 eggs

  • 200g self-raising flour

  • 1 tsp flaked salt

Method

  1. Step 1

    Heat your oven to 200C fan-forced (220C conventional). Combine the butter, vanilla and brown sugar in the bowl of a stand mixer fitted with the paddle attachment and beat for about 5 minutes until fluffy. Add the bananas and eggs and mix well. Sift in the flour and add the salt and mix gently to combine.

  2. Step 2

    Scoop about a tablespoon of mixture onto a lined baking tray and repeat, leaving about 10cm between each scoop.

  3. Step 3

    Bake for 10 minutes until browned. Allow to cool on the tray before moving to a rack.
