The American dish “clams casino” is delicious but it can be a little finicky. However, substituting fish fillets for clams makes for an incredibly simple main meal.

Ingredients

  • 650g white fish fillets (such as flathead, ling or snapper)

  • salt and pepper, to season

  • 50g butter

  • 1 tbsp vegetable oil

  • 4 rashers of bacon, rind removed and diced

  • 1 small brown onion, finely diced

  • 2 cloves garlic, roughly chopped

  • 1 small red capsicum

  • 1 cup panko breadcrumbs

  • 2 tbsp finely shredded parsley, to serve

  • lemon wedges, to serve

Method

  1. Step 1

    Heat your oven to 180C fan-forced (200C conventional). Season the fish fillets with salt and pepper and fit them snugly into a baking dish.

  2. Step 2

    Heat a large frying pan over medium heat and add the butter, vegetable oil and bacon. Fry the bacon until lightly browned, then add the onion and garlic and fry for a minute or two until softened. Add the capsicum and fry for a further minute, then stir through the panko.

  3. Step 3

    Scatter the breadcrumb mixture over the fish, season with a little more salt and pepper, then bake for 20 minutes until the fish is cooked through and the breadcrumbs browned. Scatter with parsley and serve with lemon wedges.
