Wing it this Wednesday with speedy peri-peri chicken wings and oven-baked feta fries
Ditch the Nando’s and embrace the bold, fiery flavours of these Portuguese-style chicken wings.
This spicy Portuguese-inspired chilli sauce belongs in a bottle. Coat your chicken wings for a quick meal or leave to marinate for a more intense flavour.
For the perfect accompaniment, pair with these baked fries with oregano and feta, which are also great for sharing.
Ingredients
PERI-PERI CHICKEN
1 tbsp smoked paprika
2 garlic cloves, crushed
1 long red chilli, chopped
2 tbsp honey
juice of 1 lemon
1kg chicken wingettes
OREGANO and feta FRIES
800g potatoes, cut into thick chips
2 tbsp extra virgin olive oil
50g feta, to serve
¼ cup oregano leaves, chopped
mixed salad leaves, to serve
Method
Step 1
Preheat the oven to 180C fan-forced (200C conventional). Combine paprika, garlic, chilli, honey and half the lemon juice in a small blender. Season with salt and blend until smooth.
Step 2
Place the wingettes in a large bowl. Add the blended peri-peri sauce and toss to combine. Transfer to a large, lightly greased tray.
Step 3
Place potatoes on a separate tray. Toss with olive oil, drizzle with remaining lemon juice, and toss again to combine.
Step 4
Place both trays in the oven and bake for 20 minutes, turning occasionally, until the chicken is sticky and caramelised, and the potatoes are golden.
Step 5
Transfer the chips to a serving bowl and top with crumbled feta and oregano. Serve the wings with the chips and salad on the side.
