A street-food style menu matches the carnival mood, starting with spicy guacamole, or roasted corn with lime mayonnaise and salted ricotta. The mushroom quesadilla with a punchy preserved truffle XO sauce is an unconventional take on tradition, while marinated pork belly tacos with salsa verde and sliced pineapple are a sweet, fatty treat – particularly with another shot or two.
