Easy pizza
These delicious snacks can be made from start to finish in 15 minutes. Great for a weekend breakfast or brunch, but also a sure-fire winner as an after-school snack.
Ingredients
1 piece Turkish bread, about 15cm square, cut in half horizontally
2 tbsp extra virgin olive oil
1 clove garlic, halved
1/3 cup tomato pasta sauce
4 anchovy fillets, torn
8 black olives, halved and pitted
2 tbsp chopped fresh oregano (or basil)
1/3 cup coarsely grated firm mozzarella
Method
Preheat oven to 200ºC. Put bread slices on a paper-lined baking tray, crust-side down. Brush with 1 tbsp olive oil. Bake for 5 minutes.
Remove from oven carefully and lightly rub each slice with cut clove of garlic. Spoon on tomato sauce and smear it right to the edges with the back of a spoon.
Dot with torn anchovy fillets and olives and scatter oregano over.
Divide grated cheese and spread it right to the edges.
Grind over some black pepper and drizzle with the remaining olive oil.
Bake for 10 more minutes. Remember that the cheese will be very hot, so wait a minute or so before taking the first bite.
