Banana and chocolate muffins
Banana and chocolate are well paired in this easy to make muffin recipe.
Ingredients
2 cups self-raising flour
1 tsp baking powder
¾ cup raw or castor sugar
100g butter, melted
1 free-range egg, lightly beaten
¾ cup milk
3 ripe bananas, mashed
⅔ cup chocolate bits
Method
Step 1
Preheat the oven to 180C. Sift the flour and baking powder into a medium bowl. Add the sugar and mix well.
Step 2
In a large bowl, whisk together the butter, egg and milk. Add the banana and mix well. Stir through the dry ingredients until just combined. Stir in the chocolate bits.
Step 3
Grease 12 muffin moulds and spoon in the mixture to about three-quarters full.
Step 4
Bake for 20 minutes or until golden brown and cooked through.
