Adam Liaw's rockmelon and mango agua fresca
This fresh summer drink doesn't need booze to make it delicious. Just break out the blender and a selection of your favourite fruits and make it your own.
Ingredients
1 whole rockmelon, peeled, deseeded and cut into chunks
2 mangoes, peeled, deseeded and cut into chunks
3 tbsp caster sugar, or to taste
about ½ cup freshly squeezed lime juice (about 4 limes)

Method
1. Combine the fruit pieces, sugar and lime juice in a high-speed blender and blend to a smooth puree. Add about 1 litre of water (or to taste) and blend to combine. Strain the mixture through a medium sieve, place in a serving jug and refrigerate for at least 1 hour. Serve over ice with a sprig of mint and a slice of lime.
