More of a stew than a soup, this is one of the most popular dishes in Korea and it’s ready in just a few minutes.

Ingredients

  • 300g pork belly, skin removed and cut into 2cm cubes

  • 1 tsp sesame oil

  • 500g kimchi with its juice

  • 2 tbsp gochujang (Korean red pepper paste)

  • 1 tsp sugar

  • salt, to season

  • 300g medium-firm tofu, cut into 2cm cubes

  • 2 spring onions, thinly sliced on the diagonal

Method

  1. Step 1

    Combine the pork, sesame oil, kimchi and its juice, gochujang and sugar in a large pot and cover with 2 litres of water. Season with salt and bring to a simmer. Cover and simmer for 15 minutes.

  2. Step 2

    Add the tofu and simmer for a further 10 minutes. Taste and adjust seasoning. Scatter with spring onions to serve.
