Speedy and spicy pork and kimchi soup
More of a stew than a soup, this is one of the most popular dishes in Korea and it’s ready in just a few minutes.
Ingredients
300g pork belly, skin removed and cut into 2cm cubes
1 tsp sesame oil
500g kimchi with its juice
2 tbsp gochujang (Korean red pepper paste)
1 tsp sugar
salt, to season
300g medium-firm tofu, cut into 2cm cubes
2 spring onions, thinly sliced on the diagonal
Method
Step 1
Combine the pork, sesame oil, kimchi and its juice, gochujang and sugar in a large pot and cover with 2 litres of water. Season with salt and bring to a simmer. Cover and simmer for 15 minutes.
Step 2
Add the tofu and simmer for a further 10 minutes. Taste and adjust seasoning. Scatter with spring onions to serve.
