Adam Liaw's bacon, egg and pea fried rice
Don't overcomplicate fried rice. Like a good pasta dish, fried rice is more about the rice than the ingredients mixed through it.
Ingredients
¼ cup vegetable oil, plus extra if necessary
100g bacon, diced
2 cloves garlic, sliced
3 spring onions, finely sliced
3 eggs
6 cups leftover cooked jasmine rice, refrigerated and broken apart
1 cup frozen peas
salt and white pepper, to season
Method
1. Heat a large frying pan or wok over medium heat and add the vegetable oil. Add the bacon and fry until lightly browned. Remove from the pan, then add the garlic and spring onions and fry until fragrant and lightly browned. Remove from the pan and add to the bacon.
2. Add the eggs to the pan or wok and stir vigorously until the eggs are cooked and separated into small pieces. Add the bacon mixture back to the pan, then add the rice and the peas. Fry with the other ingredients until combined, season well with salt and white pepper, and serve.
