Adam Liaw’s cherry tomato katchumber
This cherry tomato rendition of India’s most popular salad is slightly sweeter and a bit less watery than the regular version.
Ingredients
1 Lebanese cucumber, peeled in stripes
½ red onion, finely diced
12 cherry tomatoes, finely chopped
juice of ½ lemon
5 mint leaves, finely sliced
¼ tsp ground cumin
pinch of sugar
salt, to season
Method
Remove the seeds from the cucumber and finely dice the remainder. Combine with the rest ofthe ingredients and mix well. Taste and adjust the seasoning as required.
