Olive and parmesan slaw
A good salad is a great companion to pizza. This one works so well, you could even put it on top. If omitting the anchovies, add a good pinch of salt instead.
Ingredients
½ cup pitted green olives, finely diced
1 small head, radicchio, finely diced
1 head baby cos lettuce, finely diced
½ punnet cherry tomatoes, quartered
½ small red onion, finely diced
2 anchovies, finely chopped (optional)
½ tsp dried oregano
¼ cup finely shredded flat-leaf parsley
2 tbsp red wine vinegar
¼ cup extra virgin olive oil
a pinch of sugar
¼ cup freshly grated parmesan
freshly ground black pepper, to serve
Method
Combine all the ingredients except the pepper and parmesan in a large non-reactive bowl.
Toss well and transfer to a serving bowl. Scatter with the parmesan and grind plenty of black pepper over the top to serve.
Serve alongside my 'grandma' pizza with salami and capsicum.
