Rumberry sundae.

This quick, boozy compote is a kind of express version of a bachelor's jam (see my recipe below).

Ingredients

  • 4-8 scoops good quality vanilla ice-cream

  • 4 chocolate wafer rolls

For the compote

  • 500g mixed frozen berries

  • ½ cup raisins

  • ¼ cup dark rum

  • ¼ cup soft brown sugar

Method

  1. To make the rumberry compote, combine all the ingredients in a small saucepan and bring to a simmer, stirring until the sugar dissolves. If the berries don't release enough liquid to form a syrup, you may need to add a little water. Allow to cool completely.

    Place scoops of vanilla ice-cream into chilled bowls, spoon the compote over the top and add a wafer to make it look fancy.
