At first glance, Nu Nu is just one of four restaurants occupying a simple tarpaulin-covered deck built around the trunks of majestic paperbark trees. All four share the same impossibly idyllic ocean view, but clever nuances set Nu Nu apart. An urbane fine-dining sensibility has been shrewdly adapted to the surroundings, with a little holiday fun thrown in for good measure. 'Crisped' Pacific oysters are tucked into a light batter, rolled in honey and sesame seeds and served on delicate hand-rolled green tea noodles, with pieces of jellyfish and a subtle slick of ginger caramel. It isn't all about seafood - Victorian lamb tastes as beautiful as it looks in an earthy, hand-thrown ceramic bowl. A rosy rack and single crumbed brain share the limelight with silky garlic custard - balanced with pickled anchovy and shards of candied serrano ham. Desserts are playfully sophisticated, such as an ice-cream sandwich of semi-sweet green tea and white chocolate glued together with sticky soybean paste.
