When Santiago Socrate arrived from Argentina and walked into the sea near Byron Bay, he was so taken by the rolling of the surf against the golden sand that he immediately felt sad.
“All I could think is what a shame that I am going to get used to this,” says the tall, tousle-haired chef. “Nobody should ever take this for granted.”
