Skillet meatloaf with ajvar sauce

A jar of roasted pepper sauce (avjar) and a pack of mince and you're halfway to midweek meatloaf heaven.
Ingredients
290g jar of ajvar (roasted pepper sauce)
2 garlic cloves, crushed
800g beef mince
1 ¼ cup traditional oats
1 egg
¼ cup caramelised onion
½ cup chopped parsley
2 tbsp extra virgin olive oil
1 tbsp honey
¼ cup chopped dill, to serve
Method
Step 1
Preheat the oven to 220C fan-forced (240C conventional).
Step 2
Place 1/3 cup of the ajvar in a large bowl, add garlic, mince, 1 cup of the oats, egg, onion and parsley. Season and mix well to combine.
Step 3
Drizzle a 20cm ovenproof skillet with oil, sprinkle the base with remaining ¼ cup of oats. Press the mince into the pan and spread with remaining ajar sauce, then drizzle with honey and season. Place the skillet on an oven tray and place in the oven for 30 minutes.
Step 4
Remove and set the pan aside to rest for 10 minutes. Serve with dill.
