Baby corn and snow pea stir-fry
A quick, simple yet delicious meal.
Ingredients
5 spring onions
1 packet fresh baby corn cut in half lengthways (you can substitute one
small tin of baby corn)
1 clove garlic
1 small piece ginger
3 tbsp peanut oil
small handful snow peas
2 tbsp soy sauce
1 tbsp chilli sauce
about half a packet tofu, cut in squares*
*tofu is sold in packets of about 300g - use as much or as little as you like.
Method
Cut the spring onions into short lengths. If you are using fresh baby corn, microwave or steam for a few minutes until cooked.
Crush or roughly chop the garlic and ginger.
Heat a wok until very hot, add the peanut oil and the ginger and garlic. Stir, then add the spring onions and snow peas. Cook for a minute before adding the baby corn and the soy and chilli sauce.
When the vegetables are cooked through, toss in the tofu and serve.
