These simple dressed cucumbers are a great side dish or starter for many a Chinese meal. You can also add chopped coriander or toasted sesame seeds if you like.

Ingredients

  • 2 Lebanese cucumbers

  • 1 tbsp soy sauce

  • 1 tsp dark soy sauce

  • 1 tbsp black vinegar

  • 1 tsp sugar

  • 2 garlic cloves, finely diced

  • 1 tsp sesame oil

  • 2 tbsp chilli oil (with flakes)

Method

  1. Step 1

    Cut the cucumbers into 5cm x 2cm rectangular batons and remove most of the seeds. If you like, you can season these with salt and refrigerate for 30 minutes to remove the excess moisture, then rinse and drain them before moving on to the next step. If you’re pressed for time, you can skip this step.

  2. Step 2

    Combine the soy sauces, vinegar, sugar, garlic, sesame oil and chilli oil and pour the mixture over the cucumbers. Stir and serve.

Adam’s tip: Cucumbers contain a lot of moisture, so salting them to draw out that liquid concentrates the flavour and changes the texture.
