It’s the crisp, lacy smash patties that give this inner west burger joint an edge over the competition.

With glowing menu screens, a soft drink station and matching uniforms, you’d be forgiven for thinking Chebbo’s is a national chain rather than the small, independent business it is. Owner Ali Chebbani started his fast-casual dining career flipping burgs in the family driveway, before graduating to a food truck in Roselands, and finally, a bricks-and-mortar store in Marrickville.

The burgers are certainly easy to smash. The beef brisket patty is flattened into a thin, caramelised disc, where it’s topped with lettuce, tomato, cheese and a super-delicious sweet-tangy sauce. Add on the loaded fries and a watermelon soda, and you’ll wish there was a Chebbo’s in every neighbourhood.
