As you’d expect from a hotel restaurant in a wing of grand Werribee Mansion, Joseph’s is properly dressed: white linen, heavy cutlery and sparkling stemware. Dining by day, there’s a sweeping garden view and short set-course menu of precise classics: plump grill-branded prawns; salmon fillet with smoky highlights of pancetta and truffle oil. Dinner loses the view, but gains a la carte.
