A small version of these skewers would make an easy canape and the paprika oil can be used to flavour lamb and seafood.

Ingredients

  • 8 wooden bamboo skewers

  • 1 tbsp smoked paprika

  • 4 garlic cloves, squashed

  • Salt

  • Pepper

  • 1/2 cup olive oil

  • 6 chicken thighs, skin off, boned, cut into cubes

  • 8 slices sourdough bread

  • 300g hummus

Method

  1. Soak skewers in water. Preheat a grill or barbecue.

    Mix paprika, garlic, salt, pepper and olive oil in a bowl. Skewer chicken pieces. Brush with paprika mix and grill until cooked through. They can also be pan-fried.

    Brush bread lightly with oil from the paprika mix and grill on both sides. Cut in half and serve with the chicken and hummus. A salad of rocket leaves makes a excellent side for this meal.
