If Bondi Beach has a European sister it’s Ibiza, and stepping into this relaxed local you could be in either place. A well-selected list of Spanish wines and a sharp, short cocktail list means there’s a big post-beach party feel.

The house martini combines saffron gin with dry sherry and really sings when there’s a gilda garnish to ride shotgun. Meanwhile, Suze-spiked white sangria is made for an afternoon of fresh oysters and jamon, plus the show-stopping bread with a truffle-butter candle, theatrically lit at the table to melt into a fragrant puddle.

Mains don’t fare quite as well: a seafood paella is overly salty and grilled sirloin with pedro ximenez reduction could be more tender. But for fun people-watching and top-notch drinks and snacks, Iberica is well worth dipping into.
