The modern decor with arty photos of lanterns and wooden toys marks Saigon Spice as the next generation, descended as it is from Marrickville's old school Bay Tinh eatery. And the quality is there, with a starter of crisp prawn cakes giving a big hit of shellfish flavour and a crisp pancake that's a surprise package of soft prawn and pork pieces. Pork skewers with vermicelli noodles and salad are a DIY-gem in which you use fresh lettuce to wrap the morsels, adding hoisin sauce to taste; while a rich chicken curry with nicely vinegary chilli sauce ends any meal on a high note. Long may the Tinh dynasty reign!
