Adam Liaw’s strawberry and mascarpone parfait
Parfait can refer to a pâté-type arrangement of chicken livers, a French frozen custard or an arrangement of fruit, cream and (sometimes) sorbet or granita. This is more the latter.
Ingredients
300g roughly chopped strawberries
1 tbsp honey
1 tsp balsamic vinegar
10 amaretti biscuits (or other similar almond biscuit)
Mascarpone cream
300ml thickened cream
¾ cup icing sugar mixture
1 tsp vanilla bean paste
200g mascarpone
Method
Step 1
Combine the strawberries with the honey and balsamic vinegar. Coarsely crush the biscuits.
Step 2
For the mascarpone cream, whip the cream, sugar and vanilla together until it forms soft peaks, then gently whisk through the mascarpone.
Step 3
In presentation glasses, layer the crushed biscuits, cream and strawberries, then repeat to create a layered parfait.
