Adjoining Bessie’s in Surry Hills, this lively bar by chefs Morgane McGlone and Nathan Sasi, with partner Sali, serves up classic cocktails and cheffy snacks.

The trio have whisked the former Chefs’ Warehouse building into shape, with new mustard-coloured banquettes, oak timber tables and industrial light fittings.

No bookings are required for Alma’s; simply stroll in off the street for house-made mortadella with devilled eggs and flatbread with whipped cod roe dip. The signature fish sanga from sister venue Bar Copains gets a spin-off, this time with Moreton Bay bug filling in for the crumbed King George whiting.

Cocktails are serious business—think cherry-spiked Hemingway Daiquiris and riffs on the Vieux Carre and Ramos Gin Fizz.
