The gentle murmur of gamelan music, the waft of incense, and Balinese umbrellas set the scene for what is superbly refined Indonesian food. Each dish is distinct and thoughtfully spiced and sauced, each ingredient given its starring role, from the tiny cubes of properly charcoal-smoky satay chicken to milk fish pressure-cooked with Indonesian herbs then deep-fried and served with sweet soy relish. A saucy but flavoursome rendang delights, and deep-fried eggplant with green chilli, anchovy and garlic sauce is a stand-out favourite. When booking in summer remember the courtyard, reminiscent of balmy nights in Bali. Bliss.
