When you don't want to balance on a milk crate or eat Mexican for breakfast, you need this all-time Sydney classic cafe with its blonde wood communal table and fresh flowers. Bills has been a favourite since it opened in Darlinghurst 20 damn years ago. That's a lot of scrambled eggs and ricotta hotcakes with honeycomb butter under the bridge - and now, unsurprisingly, there are a lot more bills cafes around, from Woollahra and Surry Hills, to Britain and Japan. The light-filled room is still as fresh as a daisy, and a Single O piccolo latte ($3.90) is produced with as much attention to detail as the famous eggs.
