Chill is refreshingly devoid of Gold Coast-style glitz. Nothing in the muted blues and browns of the understated contemporary interior or the breezy casual courtyard heralds the brilliance of the food that follows. Delve into Daran Glasgow's career and the picture becomes clearer, given his experience in Michelin-starred restaurants including London's River Cafe. Seared scallops in smoked tomato beurre blanc with angel hair pasta is a signature dish, perfectly exemplifying his ethos for clean flavours and respect for fresh produce. Continue the seafood theme with a perfectly pan-roasted snapper fillet with saffron and preserved-lemon gnocchi.
