Cook the garlic spinach while the steak is in the oven – it literally takes 90 seconds.

Ingredients
1 tbsp olive oil
20g unsalted butter
3 garlic cloves, finely sliced
400g baby spinach leaves (or 1 bunch English spinach)
¼ tsp cooking salt
pinch of pepper
Method
1. Heat oil and melt butter in a large saucepan over medium-high heat. Add garlic and saute for 1 to 1½ minutes until light golden.
2. Add spinach and toss for 2 minutes until wilted. Stir through salt and pepper and serve immediately.
