Chicken sandwiches
A simple classic to be enjoyed by everyone in the family.
Ingredients
1 roast chicken
6 tbsp mayonnaise
1 tbsp chopped fresh tarragon
1 tbsp seeded mustard
2 sticks celery, washed and finely chopped
Sea salt
Freshly ground white pepper
8 slices sourdough or your favourite bread
2 large handful watercress or rocket, picked and washed
Method
Tarragon and chicken are a perfect match but tarragon is a strong herb that is not to everyone's liking. Substitute parsley, chives, chervil, marjoram or basil if you prefer.
Remove chicken meat from carcass and shred into small pieces with your hands - a great job for the kids. Mix in a bowl with all other ingredients except the bread and watercress. Lay out eight slices of bread and spoon on the chicken mixture. Top with watercress and remaining bread slices. Cut in half and serve for lunch.
