Baked figs with honey and vanilla gelato
Once they're picked, figs won't ripen any further. If all you can find are firm figs, then poaching or baking them in liquid will add flavour and soften them.
Ingredients
12 figs, cut in half, top
to bottom
375ml dessert wine
4 whole peppercorns
2 tbsp honey plus
extra 6-8 tsp for serving
6 scoops vanilla gelato
or ice-cream
Method
Preheat the oven to 180C. Place fig halves, cut side up, in an ovenproof dish. Pour in dessert wine and add peppercorns. Drizzle the 2 tbsp honey over figs and bake in oven for about 15 minutes until tender. Remove figs from their liquid and cool. Place liquid in a saucepan and boil on moderate flame until liquid has reduced by two-thirds. Chill in refrigerator. To serve, place three or four fig halves in a bowl accompanied by a scoop of vanilla gelato. Add some of the reduced syrup and drizzle with teaspoon of the remaining honey.
