Coaxing onions until they are caramelised requires patience but the process is richly rewarding, as the following flavour-packed recipes demonstrate.A couple of tips from our recipe writers: Adam Liaw: "I caramelise onions by putting them in a pot over low heat and setting a timer for 6 minutes. When the timer goes off, I give the onions a stir and then set the timer again, repeating for about 40 minutes until the onions are perfectly caramelised."Katrina Meynink recommends adding a teaspoon of bicarbonate of soda to speed up the process. Or cook them down further with some vinegar and sugar to create a sticky onion jam (find more of her ideas for this below).
