The kitchen up front at Com Ga Ba Nga Hoi An gives a strong clue as to what’s on every table at this newcomer: Hoi An-style chicken rice (com ga), the combination of gently poached chicken with sunshine-yellow turmeric rice.

Order the special, and it’s a whole-bird affair, complete with a saucy braise of liver, giblets and yolk, which many pour directly over the rice, papaya salad cutting the richness.

The rest of the menu revolves around central and northern Vietnamese fare: bun ga mang moc is a nourishing sweet broth of chicken, pork meatballs and bamboo shoots, and cao lau marries pork with greens in a springy rice noodle soup.
