The authentic pizzas here has Balmain locals queuing and a stream of takeaways flying out the door. Italian mozzarella and best-quality prosciutto, bresaola, shaved parmesan and fruity tomato sauce sit on chewy, perfect bases. There are tomato sauce-free pizze bianche, with toppings such as gorgonzola, porcini and prosciutto or thinly sliced potato with Italian sausage and rosemary. A chalkboard list bans ham and pineapple and half-and-half, and promises an Italian-certified pizza maker. There's a small selection of pastas, starters such as pizza crust bruschetta and the devilish Nutella-stuffed calzone scattered with slivered almonds. It can get noisy on weekends, true to vibrant Italian form.
