Chef-turned-pitmaster Casey Hildebrand deservedly has a cult following for juicy, well-crusted brisket, fall-apart pulled pork and his own beef and cheese sausages, served on paper-lined metal trays with house-made condiments including signature black garlic ketchup.

Whether you’re dining at a simple timber-topped table nodding along to Bon Jovi or heading home with a brimming takeout box, it pays to pre-order online. Specials can sell out fast, as does the epic smoked steak on a Martin’s potato bun with caramelised onion and Hildebrand’s take on baconnaise.

Filipino-accented sides such as garlic fried rice reflect the chef’s heritage, while partner Eliza Hawker’s honey-butter cornbread seals a sweet Southern deal. For now, it’s soft drinks only but a liquor licence could soon change that.
