Despite having to walk through a shopping mall to get to the restaurant, once there, the marina-side location is quite spectacular. Glass makes the most of its location on warm summer nights by offering diners quayside tables. Large white plates make the perfect palette for the colourful and keenly constructed meals, such as a smooth baby fennel gazpacho with tomato. Some dishes could do with a bit more punch but oysters with soy, mirin and sake vinaigrette are a refreshing change from the norm. The location obviously lends itself to the numerous seafood options such as Cone Bay barramundi served with delicate potato 'scales'; full-flavoured with moist, soft flesh, or chinook salmon seasoned with lavender salt, with a smoked seafood croquette and baby beetroot mousse. Other dishes hint at multiple nationalities, reflecting the abundance and variety within contemporary Australian cuisine.
