Ordering a Perrier over a power lunch was seen as the height of sophistication in the 1980s. Expensive and reassuringly cosmopolitan. Fast forward to today, and sparkling water is in every supermarket or household table across the Western world. It is also in a dizzying array of guises, from seltzer to bottles suffused with wild orange and mint.

Drinking fizzy water is clearly far better for you than downing cans of Coca-Cola. But there’s more to this beverage than meets the eye.
